Clean Sheppard's Pie

Guys, this is amazing. So I am always happy to try new recipes, especially with clean eating. I am not going to lie, this is not my recipe. I made a few changes myself from the original but it isn't mine. That being said, it is so good I have to share it! I have already made it 3 times since I found it. This is such an easy, hearty dish that feels like comfort food. It makes a ton so it is great for leftovers and leaves you totally satisfied.
Ingredients:
1 package ground turkey (or ground meat of choice)
2 large sweet potatoes, peeled and chopped
2 cups (1 package) brussel sprouts
2 cups carrots, chopped
1 1/2 cups celery, chopped
1 1/2 cups onion, chopped
1 T minced garlic
1 tsp salt
1 tsp lemon pepper
1 tsp oregano
1 tsp basil
1/2 tsp thyme
1/2 tsp turmeric
1 T extra virgin olive oil
(potato topping)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp thyme
salt and pepper
1/3 to 1/2 cup almond milk
Directions:
Preheat oven to 375 degrees. Start by peeling and chopping your potatoes into large chunks. Place them into a pot of water on medium high heat till they are very soft, about 15 minutes. I usually start these first and then make everything else while they are going.
Once the rest of your veggies are chopped, put your olive oil into a large pan with a lid on medium heat. start with the brussel sprouts and carrots. Cook them with the lid on for about 5 minutes till they are soft. Add in the onions and celery and stir. Add in the seasonings and mix again. cook about 5 more minutes till the onion is translucent.
When they are done, place them into a 9 x 13 baking dish. In the same pan you used for the veggies, cook your ground turkey till it is cooked through. You may salt and pepper this to taste. When the meat is done, add it into the baking dish with the veggies and mix it up till the pan has even amounts of meat and veggies. When the potatoes are ready, strain them out. Put them back into the same pot you used to cook them and add the almond milk, and seasoning. Mash them with a fork till it becomes smooth. Take the potatoes in spoonfuls and add it on top of the filling. Smooth it out till it is all covered and even. Cook it in the oven for 10 to 15 minutes, till the top has some golden color. Enjoy!
