Blueberry Muffins

Yesterday I was craving blueberry muffins. I thought about just grabbing a blueberry muffin quest bar but honestly I wasn't feeling a protein bar. So I took the opportunity to create a blueberry muffin recipe that fit my macros. These are totally delicious, moist and fluffy. I really am not kidding when I say this tastes just like a normal blueberry muffin. But these are better because they are guilt free! Also just a reminder, in this recipe I use Quest vanilla protein powder. When baking, 100% whey protein can create a cardboard like texture sometimes when they are exposed to high heat and Quest proteins are made for baking with 60% whey and 40% micellar casein proteins. They can withstand a higher heat and they mix into batters incredibly well. I really recommend this brand for baking especially with this recipe since the oven temp is so high. I hope ya'll enjoy!

Ingredients:

4 T egg whites

2 T coconut oil

2 T butter

2 T unsweetened apple sauce

2 T Truvia baking blend sweetener

3/4 C plain, non-fat greek yogurt

1/2 C quest vanilla protein

1/3 C oat flour

2 T coconut flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp lemon juice

1/2 tsp vanila

1/4 tsp salt

1 cup blueberries

Directions:

Preheat oven to 375 degrees. In a large mixing bowl, add coconut oil and butter. Microwave for 20 seconds till melted. Add in egg whites, apple sauce, and sweetener. Mix well with handheld mixer or wisk. Add in yogurt and mix. Next add protein, flours, baking powder and baking soda. Mix them together and add the lemon juice, vanilla and salt. The batter will be thick, do not over mix. Fold in the blueberries and transfer into greased muffin tin. This will make 9 muffins. Bake for 13-16 minutes. Let them cool and enjoy!

Macros: 117 Calories per muffin, 10 carbs (1.6 fiber/3.6 sugar), 6.1 fat, 6.8 protein

Tips:

-you can replace the egg whites with 1 whole egg

-mix some lemon or vanilla protein powder with some blueberry juice or water to create a glaze
