I went through 3 trials with this and finally got the perfect cookie. The consistency is great and you still feel like you are getting a full flavored cookie but with way less calories! This recipe makes 12 cookies and 1 serving is 2 cookies. The nutrition is based off "bobs red mill" flours, Quest protein powder, Truiva sugars, and lily's dark chocolate sugar free baking chips. If you use different brands, your macros will be slightly different. If you're not sure where to buy, there are links on my Product Review page!
Ingredients:
1 scoop Quest vanilla protein powder
1/3 C coconut flour
1/2 C oat flour
1 T Truvia baking blend sugar
2 T Truvia brown sugar blend
1/2 tsp baking powder
1/4 tsp baking soda
2 T Chobani fat free greek yogurt
2 T unsweetened apple sauce
2 T coconut oil
1 tsp vanilla
1 whole egg
4 T Lily's dark chocolate sugar free chips
Directions:
Preheat oven to 350 degrees. Mix dry ingredients in medium bowl. Melt coconut oil separately. Mix wet ingredients in large bowl, coconut oil last. Add in the dry in thirds to the wet till mixed. Add in the chocolate chips. Place on greased cookie sheet, with a heaping tablespoon. Press them down onto the sheet to desired thickness. They will rise some but will not spread out, so flatten till desired width. Bake for 8-10 minutes, do not over bake! They may seem like they aren't done but they are. When the edges get a little golden they are ready. Let them cool and that is it! Macros for 2 cookies are: 201 Calories, 23.2 g Carbs (3.2g sugar, 5 g fiber), 8.7 g Protein, 10 g Fat.
