Lean, Mean, Salsa Chicken

I am always looking for flavorful recipes that have good macros. Sometimes I find something that looks great and I start to read the recipe and it has 50 different steps and a bunch of abnormal ingredients that are either really expensive or hard to find. This recipe is super delicious, super healthy and super easy. It is a great leftover dish and freezes well. I would say I make this during my meal preps almost every week. I don't honestly think I will ever get tired of it.

So first thing to know is that every week I put chicken in a crock pot with just some water, chicken stock, salt, lemon pepper and garlic. I do mostly breast and sometimes I add chicken thighs too. I just let this cook on high for at least 3 hours till it is tender and cooked. I usually take a few breasts out for meals and then I shred the rest together. After it's shredded I take a pound and half of it out for this salsa chicken. If you aren't looking to do it separately and also cook a bunch of other chicken, you could take about 4 breasts and put them in a crock pot with all the other ingredients.

All the ingredients are pictured below except salsa. I add 1 Cup of pace chunky, mild salsa. It is up to you what salsa you like but most have similar macros. I rinse and drain all the beans and the corn. The tomatoes, chiles, and sofrito just goes straight in. I just do a dash of each of the seasonings. If you want it more spicy, you can do more cayenne pepper and chilli powder. Obviously if you don't want it as spicy, don't do as much. I don't like much spice and I would say I use about half a teaspoon of each. I also add salt and pepper to taste.

When I am cooking this with my pre-cooked shredded chicken, I just put everything in a pot on the stove on med/low heat and let it just kind of simmer for a while till all the flavors are incorporated. My favorite tortillas are pictured below, the low carb Tumaro's multi grain wraps. They taste great and are great for you! The tortillas alone have only 60 calories, 4g net carbs, 2g fat, and 6g of protein!

This recipe makes about 12 servings. The serving size is about 3/4 c. It really depends on how much I can fit in my tortilla, haha. I like to top it with a little cheese or avocado, depending on what I have in the house.

Macros for the chicken salsa are 180 calories, 17g Carbs/13g Net carbs, 2g Fat, 14g Protein

If you add a tortilla its 240 calories, 28g carbs/17g Net carbs, 4g Fat, 20g Protein
