Chocolate Chip Pancakes

Today is my husbands 26th birthday! I decided to make him some pancakes and eggs. I have tried 3 different "protein pancake" recipes now and so far these are my favorite! The recipe is from Quest Nutrition. I changed the recipe a bit and was happy with it. If you don't have quest brand of protein, any vanilla will do. I personally like the way their protein bakes and cooks. If you make an account on their website they have a great thing called the "Cheat Clean Cookbook ." Most of their recipes ask for their products but a lot of things can be substituted. (link on page)

The dark chocolate chips are SUGAR FREE! But guys, they taste great! I ordered them from Thrive Market and they were a bit pricey but SO worth it! Have your chocolate guilt free. They will definitely be a staple in my pantry from now on. The link to purchase these is on the Product Review page.

The recipe makes about 8 pancakes. You want to cook these on a little below medium heat with just some non-stick cooking spray. If you cook things with protein powder in them at too high of a heat you can experience a cardboard type of effect on your food. I have the recipe and macros below, not including the eggs on the side.

Ingredients:

3 Tablespoons liquid egg whites

1 whole egg

1/4 C unsweetened almond milk

1 teaspoon vanilla extract

2 Tablespoons truvia baking blend sugar

2 teaspoons baking powder

1 1/2 scoop vanilla protein powder

3 Tablespoons oat flour

1/4 teaspoon salt

1 Tablespoon water

2 T Lily's Dark Chocolate sugar free chocolate chips

Directions:

mix together the ingredients in order and mix as you go. do not add the chips yet! do not over mix. let the batter sit for a few minutes if you can before putting into the pan to help the baking powder work to create fluffier pancakes. after putting the batter into the pan, add a few chocolate chips on top of each pancake before flipping.

Macros for 2 pancakes: 121 Calories, 15g Net Carbs/19g Carbs, 5g Fat, 16g Protein
